Chef Tim Gikas is the co-owner of Town Creek Bed and Breakfast and a Business Management & Quality Consultant. Raised in the the Texas Panhandle, Tim and his wife Connie have lived and operated their bed and breakfast in Fredericksburg Texas for over 4 years.

Tim's cooking experience began as a young child learning to select and prepare recipe ingredients in his Greek immigrant family's restaurant which often served 500 or more meals a day. Tim continued to cook and serve food in the restaurant through his young adult years where he gained additional experience often cooking or grilling for small and medium groups.

Today, Tim reserves cooking time primarily for his personal pleasure though he and his wife Connie do serve a gourmet style breakfast to over 2000 people per year in their Fredericksburg Texas Bed and Breakfast.

Choosing to begin with basic recipes and add a lot of inspiration, most of Tim's creations reflect the culinary influence he received from both his Greek and Southern grandmothers using fresh local ingredients and uncomplicated preparation.

Fusion is a word Tim particularly enjoys when cooking by choosing to fuse multiple food tastes learned from different cultures around the world. When traveling abroad Tim always seeks out the local perspective on food and constantly adds new ideas to his favorite preparations.

Tim's favorite style of cooking is that often found in French Bistros where strong rich flavors are evoked out of simple local ingredients commonly using wine reductions or fresh spices to fortify a food's taste.

Timothy, who has a computer science background, is a professional project manager, six sigma black belt, and a business process management consultant. He has over twenty years experience as a project manager for an international engineering firm and as a sr. director for a major travel and financial services company. After moving to Fredericksburg four years ago, Tim took a position as Manager of Quality with a local manufacturing concern. In a consulting capacity he also assists companies to develop self-managed-work-teams in addition to helping his wife with their businesses, Town Creek Bed and Breakfast and Fredericksburg Cooking Academy.

Tim is actively involved with his community having served on the Board of Directors of The Fredericksburg Chamber of Commerce, the Board of Directors of the Fredericksburg Area Lodging and Hospitality Association, and is a Rotarian.
